Quinoa French Onion Casserole

The biggest pain in the ass is cleaning the quinoa. Seems this stuff has a coating requiring rinsing - easiest way is to let it soak for 30 minutes then rinse the quinoa until the rinse water is clear. Then in a pot with the 2 cups of water and salt add the quinoa and bring to a boil. Once at a boil reduce to a simmer for about 20 minutes or until all the water is absorbed.
