Chicken Alfredo with Zucchini Noodles or "Zoodles"

A stolen recipe from the healthy living app Yazio, and modified just a little to enhance the flavor.  They use what they call Zoodles which are zucchini noodles you can make using a potato peeler, but I bought them pre-made from Kroger.  Zucchini noodles actually lose water when cooked so dropped in a frying pan with a few tablespoons of olive oil and heated for about 5 minutes.  This whole meal only takes just a few minutes.

3 Chicken breast fillets
Salt and Pepper
Ms Dash Table spice
2 tbsp butter
Chicken stock
3 garlic cloves
2 zucchini or buy them pre-made in the produce department
Parsley
Pint of heavy cream
Grated Parmesan


Cut the chicken into chewable size chunks and in a pan with 2 tbsp of butter, salt, pepper, Ms dash, and sliced garlic cook for about 5 minutes until the chicken is cooked and the garlic soft.  Cover and add a half a cup of chicken stock and warm to a slow boil.
Meanwhile in another frying pan add the olive oil and drop the zucchini noodles, turning them a few times to coat with the oil and cover and cook. When the chicken starts to boil off the stock pour in the heavy cream.  Sprinkle parsley over the chicken and sauce. Allow it to heat until small bubbles start to appear then continue to stir so it does not stick as the sauce thickens.  Mean while pour 3/4 cup of chicken stock over the zucchini noodles, stir and raise the temp under the noodles to allow the stock to boil, softening the noodles.  Once softened, drain and serve covered with the chicken and sauce.  Grate some fresh Parmesan on top and serve.
