Pat's (Lu's) Chocolate Chocolate Cake

1 box of devil's food cake mix
1 pkg chocolate pudding (not instant)
1/2 cup canola oil
4 eggs
1 cup sour cream
12 oz mini chocolate chips
1 bundt cake pan

Oven at 350.  Mix all the ingredients together in order listed until well incorporated with an electric mixer.  Pour into a greased and floured bundt pan.  Cook for 1 hour or until wooden toothpick comes out clean.  Turnout onto a cake plate to cool and sprinkle with powdered sugar before serving.

Apple Topped Cheesecake

1 pkg Duncan Hines yellow cake mix
1 tbsp oil
2 8oz pkgs cream cheese softened
1/2 cup sugar
4 eggs
1 and 1/2 cup (whole) milk
3 tbsp lemon
3 tsp vanilla
1 large can apple (cherry/peach/strawberry) pie filling

Oven at 300.  Reserve 1 cup of the dry cake mix.  In a large bowl combine remaining cake mix, 1 egg and the oil.  Mix will be crumbly.  Press cake mixture evenly into the bottom and 3/4 the way up the sides of a 13X9X2 inch pan.
In the same bowl blend cream cheese and sugar.  Add 3 eggs and reserved cake mix beat for 1 minute at medium speed.
At slow speed add milk and lemon and vanilla and mix until smooth.  Pour into crust

Bake for 45 minutes until center is firm.  When cool top with pie filling

Rouladen (Pig in a blanket)

2 lbs Round steak sliced thin
1/2 lb of ground sausage
1/4 cup flour
1 cans beer
3 cubes of beef bouillon
2 tbs chopped parsley
Bay leaves
salt and pepper on steak slices
Good german mustard on one side (inside)
1/4 onion for each slice of round steak - chopped

In a mixing bowl combine sausage, onions, and crumbs.  Divide the mixture up between the sliced/pounded steaks and wrap each one in a slice of bacon.  Hold pieces together with toothpicks.  Brown each in some oil then once brown.  Mix flour with 1/2 can of beer and pour over rouladen.  Add bouillon and stir.  Add remaining beer. Add parsley and bay leaves. Cook on low for 2 hours adding water if necessary

Pat's German Potato Salad

12 slices bacon
8 diced medium potatoes
3 onions sliced thin
4 tsp salt
1 tsp pepper
2 tsp mustard
5 tbsp sugar
2/3 cup vinegar
1/4 cup bacon grease
4 tbsp water
4 tbls minced parsley



Pat's Stuffed Peppers

2lbs ground beef
1 can stewed tomatoes
1 onion chopped
1/2 cup uncooked rice
1/2 cup seasoned bread crumbs
1 egg
1tbls salt
1 tsp pepper
pinch of garlic powder
Mix all the above ingredients together

1 large can of tomato sauce

6 peppers - cut off tops and clean out inside.  Boil peppers until the begin to soften then remove and drain them

Pour 1/2 can of tomato sauce on the bottom of the large pot used to boil the peppers.  Add the seasoned meat and rice mix to each pepper and set them in the pot.  Pour remaining tomato sauce over the stuffed peppers.  Cover and cook on low for 1 and 1/2 to 2 hours.
